The long delay is attributable to the difficulties of lining up schedules, given how busy Hardy and his writing partner Knight are.

But there's finally an update: Taboo producers are "currently" working on long-awaited season 2.

If things go according to plan, Season 2 will be ready by the end of 2025.

That's too bad. I was thinking of checking it out. 😕

And here's the official MGM+ press release. Season 3 will have 10 episodes and will drop in 2024.
